Spiced Cupcakes with Apple Filling

I decided to get a little creative on my one cheat day. I wanted something sweet but with a an extra shot of wowzers! That lead me to make these delectable morsels of spice cake injected with apple pie filling and topped off with a cream cheese frosting and a sprinkle of cinnamon.

Now I would love to tell you these were homemade but I’m afraid my nose would grow or I may end up with donkey ears. No bueno. Therefore, I must tell the truth, the whole truth, and nothing but the truth. Even if you can’t handle the truth. I channeled my inner Sandra Lee although I’m not sure I can even fairly call these semi-homemade. Regardless, they are so good I don’t care if they aren’t homemade and our employees at the office love them too!

Here’s what you need:

  • Spice Cake Mix
  • Cream Cheese Frosting
  • Apple Pie Filling
  • 3 Eggs
  • 1/3 c Vegetable Oil
  • 1 c Water
  • Cinnamon

Mix the batter according to the directions and pour into a cupcake pan lined with cupcake papers.

Pop the pan in an oven preheated to 350 degrees. Easy so far right? Yeppers, that’s why I have a lot of pictures.

Mine only took about 15 minutes but when you can insert a toothpick and it comes out clean you are good to go. I can say that next time I won’t fill my liners so high because these babies got “poofy”. That’s the technical term I like to use but you can see what I mean below, you know, if you’re not tech minded.

Oh my these smell like a little slice of Autumn. Okay, here’s where things get really tricky. Just kidding. I used my half teaspoon measuring spoon to scoop out the top of each cupcake. However, make sure you don’t go too deep or the good stuff drops out of the bottom when you take the paper off. Not a horrible thing but avoidable.

The apple pie filling I used had large slices in it so I poured some out on a cutting board and simply chopped them up.

Spoon a little bit of the apple pie filling into each cupcake.

Now it’s time to frost! I spooned the frosting into a zippered sandwich baggie and cut off one of the corners. You can certainly use a pastry bag if you want to be all fancified but a baggie works pretty well in a pinch. Like when your toddler pulls everything out of the drawer and you can’t find your pastry bags or tips. Just saying.

Add a sprinkling of cinnamon and Taa-Dahhh, a lovely treat that is absolutely irresistible and perfect for a Fall or Winter day.

One bite into this mountain of cream cheese frosting and into the avalanche of apple pie filling will put a smile on your face and a song in your heart! Ohhhh, and how about adding a steaming mug of cider to accompany this magnificent treat! Gotta go get some NOW!!!
