Southern Pimento Cheese

Pimento cheese is a Southern staple. It was one of my dad’s favorites and it just so happens my husband loves it too, especially homemade. You can buy it in the grocery store, and that’s great if you are short on time, but really it doesn’t take a lot to whip up a batch and even less time to devour it! I like my Pimento Cheese the day after I make it, once it has had a little time to absorb all the delicious flavors.

It takes just a few minutes and simple ingredients:

  • 2 Cups of Mild Cheddar, shredded
  • 1 Cup Sharp Cheddar, shredded
  • 8 oz Cream Cheese, softened
  • 7 oz Diced Pimentos, drained
  • 3/4 Cup Mayonnaise
  • 1 Tsp Minced Garlic
  • 1/2 Tsp Ground Mustard
  • 1/2 Tsp Onion Powder
  • 1/4 Tsp Paprika

First things first, have a cute little helper to pour in the ingredients. He loves to help Mommy in the kitchen.

Everything goes in the bowl at once:

Once you have ALL of the ingredients in, add coarse black pepper to taste.

Use a hand mixer to incorporate all of this deliciousness…

I can’t say I’ am a stickler for exact measurements so if like more garlic, add more garlic, if you like less mayo, start with less. You can always add more! It’s hard to take things away once they are in!

Like I said, I like to stick this in the fridge overnight before diving in. I love it with chips or on a sandwich! I even cut off the crust to make it a little fancy. Yum!
